Real Fast Food: Celeste's Almond Bread



My friend Celeste has a great recipe for almond flax bread that you can whip up in a couple of minutes. It's genius and tasty. The bread is gluten and dairy free and is made with whole nutrient rich ingredients. In our house we serve these buttered with poached free range eggs and avocado. They are also really good with organic natural peanut butter (the Bulk Barn version is addictive!) and toasted pumpkin seeds. You can make just what you need or make a few mini-loaves at a time. Eat them for a fast breakfast or pack them up for a post work-out snack. 

Celeste's Bread
1 tsp of coconut oil melted (can use other oils if you prefer)
2 tbsp almond flour
2 tbsp ground flax
pinch of salt
1/2 tsp baking powder
1 egg

Mix all ingredients and pour into muffin or loaf tin. Cook at 375 degrees for 8 minutes. If you are short on time you can simply pour the batter into a non-stick frying pan and make almond-flax pancakes - this takes about 2 minutes. 

Options: if desired you can add hemp hearts, seeds, herbs, or spices to the batter. 

Nutritional Info: Protein 11.5 grams, Carbohydrate 7 grams, Fat 19.8 grams (Saturated 6 g), Fibre 5.5 grams, Sugars 0.7 grams.
